We’re finally back in Berlin! Many doubted my sanity when I told them I was flying 8 months pregnant, so I’m happy to have proved you all wrong by not having the baby over the Atlantic. In fact all I really suffered from it was a little (okay, major) swelling in my feet.
As soon as I got back, even before my water balloon feet had gone back to regular size (seriously, it was like they were SLOSHING every time I stepped), I went into nesting mode.
Then I realized. Nesting. I had heard legends of this strange motherly instinct, but never believed that it could be so real. I only hope that it means that this baby is going to be born soon, because it’s really hard doing all this cleaning and organizing when it feels like I’m carrying an anchor between my legs. Either that or a professional boxer.
Anyway, here is some spinach dip I made for you long ago before we even took our trip to America. I actually made it for myself to be honest. I have to have lots of emergency snacks being pregnant and all. This spinach dip fit the bill every time. It’s super easy and fast (yay microwaves!), cheesy and gooey (yay pregnancy cravings!), and has lots of healthy spinach for baby (yay folic acid!)
By the way, I have no idea what all that black stuff on my fingers is in all these pictures. I guess I had been playing with a Sharpie or something. Please photoshop it out with your imagination. Thanks.
Microwave Spinach Dip for One
Ingredients
1 tablespoon onion, chopped fine (I used red onion)
1 cup chopped spinach, loosely packed
3 tablespoons cream cheese
1 tablespoon sour cream
1 tablespoon parmesan cheese
1 tablespoon milk
1 teaspoon corn starch
A few Shakes each of garlic powder, onion powder, Italian seasoning, salt and pepper
3/4 cup grated mozzarella cheese
